A surprisingly dry mouthfeel, and a lightly sweet, then chilli-pepper taste, at full strength, mellowing with a little water, leaving a charred, oaky aftertaste. A delicate scent of polished copper and light vanilla to start with, developing complex floral, green, mossy then fresh oaky notes, changing all the time.
But it is by no means a copy: from the start, the aim was to create a unique Japanese style. The production process is very similar to that for Scotch whisky, and the product is the closest in style to Scotch of all non-Scotch whisky. Hakushu was built by Shinjiro’s son in 1973 and is one of the largest malt distilleries in the world.
It was designed by Masataka Taketsuru (‘The Father of Japanese Whisky’), a young chemist who had been sent to Scotland four years previously by Suntory’s founder, Shinjiro Torii. Founded in 1923, Yamazaki is Japan’s oldest whisky distillery. The constituent malts come from Suntory’s two malt whisky distilleries, Yamazaki and Hakushu, and the grain component from the company’s Chita Distillery. A delicate and well balanced expression that is both subtle and complex, crafted with more than 10 malt and grain whiskies to create a harmony of flavours and aromas.

Just as with Mura, the staff is really accommodating in that you can have the dressings on the side in case you don't like it. The build-your-own was also fun we chose octopus and shrimp tempura with both being a good portion and tasty. The former had a perfect amount of heat which we confirmed by our 9 year old daughter's aversion to it. We also tried the spicy love poke bowl, and a build your own one. The broth for both was so flavorful and rich- definitely had a "wow" factor. We also have been going to nearby Naruto ramen for years, and found Mura's Tonkatsu Ramen and Shoyu Ramen to be so good that I'm predicting it might give Naruto a run for its money. We've been going to Mura for years, and were so excited to try their new ramen and poke location which is across the street from Mura.
